33 Layer Santoku, 165mm
Senzo · £164

Worth being NRY provisional
33 layers of Damascus steel folded around a hard core, in the shape the retailer says to buy if you only own one knife. The layering is partly decorative and partly functional: the softer outer layers protect a harder, more brittle cutting core. £164 buys a knife that will outlast the kitchen it is used in, provided it never goes in a dishwasher.
- For
- Someone who wants one Japanese knife to do almost everything.
- Not for
- Anyone who will not hand wash and dry it, because this steel will mark.
What we checked
- It is formed of 33 layers of Damascus steel, and the retailer recommends the santoku as the single knife to own. Sous Chef
Marked provisional: the justification rests on 1 source(s); two independent ones is the bar. We publish it anyway and say so, rather than waiting for evidence that may never arrive.
