33 Layer Gyuto, 240mm
Senzo · £199

Nice, but provisional
The same 33-layer Damascus steel as the santoku in a 240mm gyuto, which is Japan's answer to the French chef's knife: long, with a curved belly for rolling cuts. 240mm is a lot of knife for a domestic board, and most people who buy one end up reaching for the shorter blade. Buy it because you rock-chop and have the worktop for it.
- For
- Someone with a large board who slices with a rolling motion and wants the reach.
- Not for
- Anyone with a normal kitchen worktop, where a 165mm santoku is easier to live with.
What we checked
- It is a 240mm gyuto in 33 layers of Damascus steel, described as Japan's answer to the Western chef's knife. Sous Chef
