AUS10 Santoku, 16.5cm

Sous Chef · £109

A Japanese santoku knife in AUS10 steel with a plain blade and a wooden handle.

Worth being NRY provisional

AUS10 is a high-carbon Japanese steel close to VG-10, the name most people know, and easier to sharpen than it. That matters more than the hardness numbers: a knife you can bring back on a stone at home stays sharp, and one you cannot goes dull and stays dull. £109 is the sensible entry to Japanese steel.

For
Someone ready to move to Japanese steel who will learn to use a whetstone.
Not for
Anyone who sharpens with a pull-through, which will wreck this edge.

What we checked

  • It is made from AUS10, a high-carbon steel the retailer compares to VG-10 and describes as easier to sharpen. Sous Chef

Marked provisional: the justification rests on 1 source(s); two independent ones is the bar. We publish it anyway and say so, rather than waiting for evidence that may never arrive.
