Signature Deep Santoku, 17cm
Robert Welch · £84

Worth being NRY provisional
The same forged blade and full tang as the cook's knife in a deep santoku, for £84. A santoku is shorter and flatter, so it chops with an up and down motion rather than a rocking one, which suits most home kitchens better than a French profile does. Deep means more knuckle clearance, and that is the detail you notice on the second evening rather than in the shop.
- For
- Someone who chops more than they carve and wants knuckle room while doing it.
- Not for
- Anyone who slices roasts and wants a long curved blade to do it with.
What we checked
- It is a fully forged German DIN 1.4116 stainless blade with a full tang, from the Signature range. Robert Welch
Marked provisional: the justification rests on 1 source(s); two independent ones is the bar. We publish it anyway and say so, rather than waiting for evidence that may never arrive.
