Signature Cook's Knife, 20cm
Robert Welch · £68

Worth being NRY provisional
A fully forged German stainless blade with a full tang, ground to a 15 degree Japanese-style edge by hand, for £68. Full tang means the steel runs the length of the handle rather than stopping inside it, which is the difference between a knife that lasts and one that loosens. At this price that construction is the whole story, and the 15 degree edge is sharper than the 20 degrees a Western knife usually carries.
- For
- Someone buying their first proper knife who wants one that will not need replacing.
- Not for
- Anyone who wants Japanese steel, which holds an edge longer and is less forgiving.
What we checked
- It is a fully forged German DIN 1.4116 stainless blade with a full tang. Robert Welch
- The Japanese-style edge is applied by hand at 15 degrees. Robert Welch
