316 stainless rather than the usual 304, which is the grade used where salt and acid would pit ordinary steel, and vented lids so a pan at a simmer does not need watching. Oven safe to 240 degrees and dishwasher safe. At £315 for three saucepans you are paying for the alloy and the design, and both are real.
