4000FC Santoku, 18cm

Miyabi · £143

A santoku with a polished steel blade and a dark laminated wood handle.

Worth being NRY provisional

An 18cm santoku at 61 HRC and 177 grams, which is the lightest of the three santokus here and the easiest to use quickly. Zwilling build it in Japan and warrant it for twenty five years, the same cover as the harder Eden at a few pounds less. It is the sensible answer rather than the exciting one, and it is stainless, which the Eden is not.

For
Someone who wants a Japanese santoku they can treat like a kitchen tool rather than an heirloom.
Not for
Anyone chasing the hardest edge, or who prefers the heft of a wider blade.

What we checked

  • An 18cm blade, 32.5cm overall, 177 grams. Knivesandtools
  • Warranted twenty five years against material and manufacturing defects, made in Japan. Knivesandtools

Marked provisional: the justification rests on 1 source(s); two independent ones is the bar. We publish it anyway and say so, rather than waiting for evidence that may never arrive.
