Kitchen knives

Zanmai Sujihiki, 25cm

Mcusta · £237

A long, narrow slicing knife with a patterned damascus blade and a pale hinoki handle.

Nice, but provisional

A 25cm slicer at 160 grams, which is remarkably light for the length, ground flat to 12 degrees with a secondary V-edge so it parts a joint of meat in one pass instead of sawing. The damascus is thirty three layers over VG10 and it looks it. What you give up is cover: two years, where the Kai knives have ten and the Eden has twenty five, on the dearest knife in the category.

For
Someone who carves at the table often enough to want a knife that only carves.
Not for
Anyone who wants one knife, or who would rather have the longer warranty for the money.

Marked provisional: the justification rests on 1 source(s); two independent ones is the bar. We publish it anyway and say so, rather than waiting for evidence that may never arrive.
