Zanmai Nakiri, 16.5cm

Mcusta · £146

A rectangular-bladed nakiri with a patterned damascus finish and a pale hinoki handle.

Nice, but provisional

A proper nakiri: a flat 18cm rectangle of VG10 under 33 layers of damascus, ground to 12 degrees, which is the finest angle in this range and makes it very good at the one thing a nakiri is for. Mcusta warrant it two years, against ten from Kai and twenty five from Eden and Miyabi, so a noticeable part of what you are paying for is the pattern on the flank.

For
Someone who wants a dedicated vegetable knife and likes the look of layered steel.
Not for
Anyone who wants the longest cover, or one knife to do everything.

What we checked

  • 18cm blade ground to 12 degrees, 180 grams. Knivesandtools
  • Mcusta warrant it two years against material and manufacturing defects. Knivesandtools

Marked provisional: the justification rests on 1 source(s); two independent ones is the bar. We publish it anyway and say so, rather than waiting for evidence that may never arrive.
