Shun Wide Santoku, 18cm
Kai · £183
Worth being NRY provisional
VG-MAX steel clad in stainless and set in pakkawood, 18cm of blade and 240 grams of it, which is half again the weight of the Miyabi and the whole character of the knife: it falls through things rather than being pushed. Kai sharpen it to an Asian angle and warrant it ten years. The wide blade is genuinely useful for scooping, and genuinely awkward in a crowded drawer.
- For
- Someone who likes a knife with weight behind it and does a lot of vegetable prep.
- Not for
- Anyone who wants a light, quick blade, or has shallow drawers.
What we checked
- Pakkawood handle and VG-MAX steel, 18cm blade. Knivesandtools
- 240 grams, against 177 for the Miyabi santoku. Knivesandtools
- Kai warrant it ten years against material and manufacturing defects. Knivesandtools
Marked provisional: the justification rests on 1 source(s); two independent ones is the bar. We publish it anyway and say so, rather than waiting for evidence that may never arrive.
