Shun Classic Kiritsuke, 20cm
Kai · £222
Worth being NRY provisional
A kiritsuke is a chef's knife with the tip cut off at an angle, and it is the one shape here that does a job none of the others do: the straight edge chops and the angled tip does fine work without changing knives. 20.5cm of blade, 2mm thick, ground to 15 degrees, in pakkawood, at 215 grams. Kai warrant it ten years.
- For
- Someone who already has a santoku and wants one knife that covers chopping and detail work.
- Not for
- Anyone buying their first good knife: start with a santoku or a gyuto.
