Kanso Aogami Santoku, 18cm

Eden · £137

A Japanese santoku with a forged, unpolished blade finish and a red sandalwood handle.

Worth being NRY provisional

Hand-forged aogami blue paper steel at 63 HRC, which is harder than anything else here and takes a finer edge for it, with a brut de forge finish and a red sandalwood handle at 160g. The catch is the steel: it is explicitly not stainless, so it wants wiping dry and will not go in a dishwasher. Eden cover it for twenty five years, which tells you what they expect of it.

For
Someone who will dry a knife after using it and wants the sharpest edge in this range.
Not for
Anyone who leaves knives in the sink, or wants to put them in a dishwasher.
