Prima Matera Copper Frying Pan
De Buyer · £476

Nice, but provisional
Copper lined with stainless, made induction-compatible, at £475.99. Copper responds to a change in heat faster than anything else you can cook on, which matters for sauces that split and for sugar work, and matters very little for a steak. This is the most expensive pan here by £217 and it is a specialist instrument sold as a frying pan.
- For
- Someone making emulsions, caramel or delicate sauces where seconds of response matter.
- Not for
- Anyone frying and searing, where £45.99 of carbon steel does it as well or better.
What we checked
- De Buyer build it to give copper response on any hob including induction. Sous Chef
Marked provisional: the justification rests on 1 source(s); two independent ones is the bar. We publish it anyway and say so, rather than waiting for evidence that may never arrive.
